Hot Oil Filtration
Shawano Specialty Paper offers a cellulose-based substrate for filtering hot oil. Filtering oil removes the crumbs and particles that naturally drop off food when frying. These crumbs contribute to the formation of polymers and surfactants in the oil, increasing the likelihood of off-flavor or taste transfer between products. Forcing oil through a fine paper mesh during filtering separates the solids from the liquids and removes up to 90% of these contaminants. Regularly filtering the oil will substantially extend its’ life, and also reduces both shortening costs and cost per serving, while enhancing taste. Strength and air flow under these extreme conditions is important.
